叶黄素、玉米黄素生物活性及其在食品中应用研究进展摘要叶黄素与玉米黄素都属于类胡萝卜素中的一种,在自然界中广泛存在,两者属于同分异构体。叶黄素与玉米黄素都大量存在于蔬菜、水果、花等植物组织中,在人体内不能被合成,需要通过日常饮食来获取。叶黄素与玉米黄素两者的功效独特,具有多种生物活性,应用广泛,是现在国内外研究的热门之一。本文通过文献查阅法等方法对叶黄素与玉米黄素进行研究,充分了解叶黄素与玉米黄素的来源、生物活性及其在食品中的应用价值,如:叶黄素对视力具有保护作用,可以预防和治疗白内障、老年性黄斑病变等眼睛疾病,还可以延缓早期动脉粥样硬化等心血管疾病,对癌症也有一定的预防和治疗作用;玉米黄素也具有抗氧化作用,其可以预防和治疗眼睛白内障、老年性黄斑病变、心脑血管疾病等。两者可以作为着色剂、营养膳食补充剂等食品添加剂加入到食品的生产加工过程中。随着深入的开发与研究,叶黄素与玉米黄素一定能成为我国一种前途广阔的重要的食品添加剂,在我国和世界食品行业中起到重要的作用。关键词:叶黄素;玉米黄素;生物活性;应用 PAGE \* MERGEFORMAT IIAdvances in Studies on the Biological Activities of Lutein and Zeaxanthin and Their Applications in foodAbstractBoth lutein and zeaxanthin belong to one of the carotenoids.
