精品文档---下载后可任意编辑不同采收期与外源物质对蓝莓抗氧化物质的影响中期报告摘要:本讨论旨在探讨不同采收期和外源物质对蓝莓抗氧化物质的影响。通过对蓝莓不同采收期的果实进行多酚和花青素含量的分析,结果表明,成熟期蓝莓多酚和花青素含量均显著高于青果期和未熟期。在成熟期中,果实中总多酚和总花青素含量分别为 22.6mg/g 和 32.4mg/g。同时,在外源物质处理中,添加过氧化氢可以显著提高蓝莓果实的抗氧化活性,单独添加丙氨酸和天冬氨酸效果不明显,但与过氧化氢联合添加可以进一步提高果实的抗氧化活性。因此,成熟期蓝莓可以作为一种富含多酚和花青素的天然抗氧化剂,而外源物质的添加可以进一步增加其抗氧化活性。关键词:蓝莓;抗氧化;多酚;花青素;外源物质Abstract:The aim of this study was to investigate the effects of different harvesting periods and exogenous substances on antioxidant substances in blueberries. The contents of polyphenols and anthocyanins in blueberries harvested at different periods were analyzed, and the results showed that the contents of polyphenols and anthocyanins in mature blueberries were significantly higher than those in green and unripe blueberries. In the mature period, the total polyphenol and total anthocyanin contents in fruits were 22.6mg/g and 32.4mg/g, respectively. Meanwhile, in exogenous substance treatment, hydrogen peroxide could significantly enhance the antioxidant activity of blueberry fruits. The addition of proline and aspartic acid alone had no significant effect, but combined with hydrogen peroxide could further improve the antioxidant activity of fruits. Therefore, mature blueberries could serve as natural antioxidants rich in polyphenols and anthocyanins, and the addition of exogenous substances could further increase their antioxidant activity.Keywords: Blueberry; Antioxidant; Polyphenols; Anthocyanins; Exogenous substances
