年产 6000 吨速冻蔬菜工厂设计题目:年产 6000 吨速冻蔬菜工厂设计Plant Design of 6000t/a Quick Frozen Vegetables 研究生:钱 清专业:食品工程研究方向:食品加工导师:张 灏 教授 (江南大学食品学院院长) 摘 要本设计主要是进行年产6000t 速冻蔬菜工厂设计。年产6000t 速冻蔬菜的项目是对应江苏工业经济结构调整的重点项目,本设计从当地资源、地理环境、政策环境等各项条件出发,针对6000t 速冻蔬菜项目的需要,进行了车间平面设计、产品方案及工艺论证、设备选型、物料衡算、全厂卫生安全、企业组织等研究与设计。由于速冻蔬菜大部分出口,因此为了使产品质量达到世界水平而对速冻蔬菜的HACCP 也进行了详细的分析与统计。最后对本方案进行了技术经济分析,研究表明:该项目固定资产投资1300 万元,年利润达到768 万元,经营安全率达到80%, 投资回收期为2.5 年。 关键词:速冻蔬菜工厂设计效益分析Abstract The Plant design of a 6000-ton production capacity of fast frozen vegetables This study was aimed to design a fast frozen vegetables production plant with a 6000-ton production annual capacity. This plant design is a key project during the process of structural adjustment of industrial economy in Jiangsu Province. Workshop horizontal design, production line, selection of processing technology and equipment, materials balancing, hygiene and safety, and organization were studied and designed for the fast frozen vegetables production, based on the local condition of resources, geographical environment, and governmental policies. For the purpose of export-oriented production, the HACCP procedure was fully analyzed. At last the analysis of technical economy of this project was done, it showed that the fixed assets was 13 million RMB, the annual profit was 7.68 million RMB, the rate of safe management was 80%, and the return time of investment was 2.5 years.
