Through carbon source induction experiments of alpha-galactosidase-producing bacteria, the most suitable carbon source for alpha-galactosidase production was screened, and the induction mechanism was further explored. At the same time, combined with the synergistic effect of other enzyme species, a composite enzyme preparation is constructed to improve the stability, activity, and effect of the enzyme.
