The aim of this study was to screen and study the application of probiotics in the food industry from turtle intestines. First, strains with antibacterial activity were screened by measuring the total number of microorganisms and bacterial population structure in different turtle intestinal regions. Then, the survival rate and ability to resist gastrointestinal stimulation of the strains were evaluated under simulated stomach and intestinal conditions of acid, bile salts, and high temperature. Finally, the screened probiotics were applied to dairy and meat products, and their effects on food quality and nutritional components were studied. The results showed that some strains in the turtle intestines had strong antibacterial activity and gastrointestinal adaptability, and significantly improved the quality and nutritional value of food.Keywords: turtle intestines, probiotics, screening, application.
