北京理工大学珠海学院 2020 届本科生毕业设计年产 510 吨红枣果酒发酵车间设计摘 要红枣是鼠李科枣属植物的成熟果实。我国作为世界上唯一一个红枣出口国家,不仅在红枣种植生产方面有着丰富的经验,而且贸易方面也在世界市场上占据一定的地位。人民大众的生活质量跟随时代的更替在逐渐提高,生产低酒精度的保健果酒愈来愈流行。红枣作为集食、药、补于一身的佳品,更是被认为可用于生产保健红枣果酒的不二之选。保健红枣果酒的市场定位近年来被大众快速认可。因此,红枣果酒作为新型保健果酒,具备有可大力发展的潜能,应大力推广。本设计说明书是对年产 510 吨红枣果酒发酵车间的设计:以金丝小枣为原料,经过一系列加工工艺,在特定酵母菌的作用下,采用密闭式发酵的方法制成。此设计说明书旨在设计一条适用于工业生产大批量红枣果酒的工艺线路,对各个生产过程进行分析,并且在此基础上对生产发酵车间进行了设计,设计所需要的发酵罐和其他主要设备,绘制生产车间布置图和设备设计图。还根据工艺过程对红枣果酒的生产加工过程中的原料用量进行了物料衡算的工艺计算,对生产过程进行水量、电量、耗冷量等衡算。关键词:红枣果酒,金丝小枣,发酵车间,物料衡算1北京理工大学珠海学院 2020 届本科生毕业设计AbstractRed dates are ripe fruits of the genus Rhamnoides.
