摘 要本文采用乙酸乙酯提取法对长裙竹荪菌盖进行提取,并研究了此提取物对草鱼鱼糜的保鲜效果。在 4℃冷藏条件下,为期 11 天,每隔 2 天测定一次,以菌落总数、挥发性盐基氮(TVB-N)、丙二醛(MDA)为质量指标,评价不同添加量的竹荪菌盖提取物对草鱼鱼糜品质的影响。结果如下:(1)与空白对照组相比,添加了竹荪菌盖提取物的试验组的菌落总数、TVB-N 值、MDA 值均显著降低(p<0.05),说明竹荪菌盖提取物具有显著的保鲜作用;(2)与阳性对照组相比,确定竹荪菌盖提取物的最佳添加量为 2mg/g。关键词:竹荪菌盖提取物;鱼糜保鲜;菌落总数;挥发性盐基氮;丙二醛AbstractIn this paper, the extract of dictyophora indusiata was extracted by ethyl acetate method, and the fresh-keeping effect of the extract on grass Carp Surimi was studied.Under the condition of 4 °C cold storage, it was determined for 11 days, every 2 days, the total bacterial count, volatile base nitrogen (TVB-N) and malondialdehyde (MDA) were used as quality indexes to evaluate the effect of different amount of dictyophora indusiata pileus extract on the quality of grass carp surimi.The results are as follows:(1)Compared with the blank control group, the total bacterial count, TVB-N and MDA of the test group with the extract of dictyophora indusiata were significantly decreased (p < 0.05) ,which showed that the extract of dictyophora indusiata had significant fresh-keeping.(2)Compared with the positive control group,the best addition of dictyophora indusiata pileus extract was 2 mg / g.Key words:Extract of dictyophora indusiata pileus; Minced fish to keep fresh;Total number of colony;Volatile base nitrogen;Malondialdehyde目 录1 引 言...........................................................11.1 竹荪............................................................11.1.1 竹荪简介......................................................11.1.2 竹荪在保鲜方面的研究现状......................
