小麦胚中谷胱甘肽含量与几种元素间含量的相关性讨论食品学院 食品质量与安全专业 爽(指导老师:黎 职称:副教授)摘要:测定19份不同来源小麦生、熟胚芽中总谷胱甘肽、还原型和氧化性谷胱甘肽以与Ca、Fe、Zn、Se元素的含量,讨论了谷胱甘肽与4种元素间含量的相关性。结果表明,3种谷胱甘肽与4种元素含量间均存在一定差异,总谷胱甘肽与Zn、GSH与Se达显著相关。熟制加工后谷胱甘肽与Se含量呈极显著正相关,较之生品有明显改善。谷胱甘肽与元素间含量的相关性由参加生化反应的多种物质决定,利用筛选高Se品种从而获得高谷胱甘肽含量的小麦胚时,应考虑材料加工的影响。关键词:小麦胚;谷胱甘肽;元素;相关性Studies on Correlation between the content of Glutathione and Several Elements in Wheat GermAbstract: 19 samples of raw and cooked wheat germ from different sourceswere determined for the contents of total glutathione, reduced glutathione (GSH), oxidized glutathione (GSSG), Ca, Fe, Zn and Se, with the correlation between the glutathione and the four elements content studied. The results showed that some variabilities existed in glutathione and 4 elements. Besides, highly significantly correlation was showed between total glutathione and Zn, as well as GSH and Se. Total glutathione was highly significantly positively correlation with Se content in cooked samples, which improved noticeably.
