Key words:Fruits and vegetables,storage,preservation technology,research progress 新鲜水果、蔬菜是日常所需维生素、矿物质和膳食纤维的重要来源，是人们生活不可缺少的食品。由于生产的季节性、地域性和产品易腐性，给果蔬采后处理、贮藏保鲜等环节来带很大的困难。为解决这一问题，很多果蔬保鲜技术便应运而生，通过贮藏保鲜消除了季节性和地域性的限制，满足了各地消费者对果蔬的需求。而随着现代科技的发展，在果蔬贮藏保鲜方面不断涌出新型的保鲜技术。虽然中国果蔬产量很高，但由于果蔬采收后的生理衰老、微生物侵害及机械损伤等多种原因易变质，不耐贮藏[1]。据有关数据统计，现阶段中国果蔬的腐烂损耗率较高，水果为30%左右，蔬菜为40%-50%，而发达国家平均损耗率不到7%[2]。因此加强果蔬保鲜技术的研究和应用，对农业的发展及人民生活水平的提高有重要意义。1.1 果蔬贮藏保鲜简况目前国内外的果蔬采后贮藏保鲜技术方法主要分三类：物理方法、化学方法和生物方法。物理方法可分两类：一是对微生物...
