Its seeds are rich in anthocyanins, which are natural pigments with various biological activities, such as antioxidant, anti-inflammatory, and anti-cancer properties. However, the stability of these pigments is easily affected by environmental factors, such as pH, light, and temperature. Therefore, finding effective ways to stabilize these pigments is of great significance for their further utilization. Microbial degradation has been proved to be an efficient method to degrade anthocyanins. Aspergillus niger, a common fungus found in nature, has been reported to have the ability to degrade anthocyanins. In this study, we aim to investigate the degradation process of Hippophae rhamnoides seed anthocyanins by Aspergillus niger and explore the degradation mechanism.Objectives:The objectives of this study are:1. To isolate Aspergillus niger strains from the natural environment and identify their degradation ability towards Hippophae rhamnoides seed anthocyanins;2. To investigate the degradation pathway of anthocyanins by Aspergillus niger in vitro;3. To analyze the changes of the physicochemical properties of Hippophae rhamnoides seed anthocyanins during the degradation process.Methods:1. Collection of Hippophae rhamnoides seeds: Hippophae rhamnoides seeds will be collected from a local market and crushed into fine powder.2.
