This paper will study a method of enzyme synthesis of medium-chain fatty acid glycerides, and test its physical and chemical properties and antibacterial activity. The main content includes the following points: 1. Discuss the mechanism of the production of medium-chain fatty acid glycerides, and clarify the basic principles of enzyme synthesis; 2. Experimental design and plan formulation, including the selection of suitable enzyme catalysts, substrates, and reaction conditions; 3.
