This study aims to optimize the fermentation conditions of the PS04 strain for producing extracellular polysaccharides, and analyze the structures of the polysaccharides. Firstly, the strain is identified and screened, and the optimal fermentation temperature, pH value, medium composition and time are determined through shake flask experiments, with a controlled variable experimental design. Secondly, the structure of the polysaccharides is analyzed using high-performance liquid chromatography, gas chromatography, mass spectrometry and other technologies to determine molecular weight, monomer composition, linkage pattern and spatial structure, etc. The results of this study are expected to provide basic research support for the development and application of extracellular polysaccharides from this strain.【Keywords】Microbial fermentation; Extracellular polysaccharides; Optimization; Analysis
