This paper focuses on the optimization of γ-GT fermentation conditions and the study of its synthetic regulation mechanism. Firstly, the basic introduction, functional characteristics and related research progress of γ-GT were investigated through literature review. The mechanism and application of γ-GT were elaborated, and the research objectives and significance of this paper were put forward in combination with the existing research results.This paper will study the production strain and liquid fermentation of γ-GT, optimize the fermentation conditions of γ-GT through orthogonal experimental design, including the influencing factors of fermentation culture medium and fermentation conditions, obtain the optimal production 精品文档---下载后可任意编辑conditions of γ-GT, and measure the enzymatic properties and yield of γ-GT.
