摘 要灵芝是我国著名药用真菌,灵芝提取物中最关键的药效成分分别为灵芝多糖及三萜,是有效的抗肿瘤物质成分,DPPH 法研究灵芝液体发酵过程多糖、三萜以及发酵液的体外抗氧化能力,结果显示:灵芝发酵过程的菌丝球大小分布较均匀,以添加麦芽糖碳源的菌丝球数量最多,麦芽糖培养基中含有 98/mL 个菌丝球;灵芝发酵过程的菌丝体生物量相差不大,以果糖加乳糖培养基的生物量最高,为 2.54g/L;灵芝发酵过程的胞外多糖含量以果糖加乳糖培养基含量最高,为 0.47g/L;灵芝发酵过程的胞内多糖含量以乳糖培养基的含量最高,为2.66g/L;灵芝发酵过程的三萜含量以葡萄糖培养基最高,为 0.32%;灵芝发酵过程的 DPPH 抗氧化性以乳糖加蔗糖培养基含量最高,为 17.23%。本文可为灵芝经济有效的液体发酵提供理论参考。关键词:灵芝;液体发酵;多糖;三萜;菌丝体生物量。AbstractGanoderma lucidum is a famous medicinal fungus in China. The most important pharmacodynamic components of G. lucidum extract are Ganoderma lucidum polysaccharide and triterpenes, which are effective anti-tumor components. DPPH method was used to study the antioxidant ability of polysaccharides, triterpenes and fermentation broth during liquid fermentation of G. lucidum. As a result, the number of mycelial spheres in the fermentation process of G. lucidum was the most, and 98/ mL mycelial spheres.the biomass of the base was the heaviest ,2.54g/L; the extracellular polysaccharide content in ganoderma lucidum fermentation process was the highest in fructose and lactose medium ,0.47 g/L; the intracellular polysaccharide content in G. lucidum fermentation process was the highest in lactose medium ,2.66 g/L; the triterpenoid content in ganoderma fermentation process was the highest in glucose medium ,0.32%; the DPPH antioxidant content in the fermentation process was the highest in lactose plus sucrose medium ,17.23%.
