However, there are some unpleasant flavor components in the protease solution of mackerel scad, which will affect its application effect. Therefore, this paper aims to study the adsorption and removal technology of unpleasant flavor components in the protease solution of mackerel scad.Firstly, through the analysis and identification of unpleasant flavor components in the protease solution of mackerel scad, choline and creatine were identified as the main unpleasant flavor components. Secondly, different types of adsorbents were used for laboratory simulation adsorption and removal experiments, and the adsorption effects of various adsorbents were compared. Finally, the adsorbent with the best performance was selected for on-site removal experiment.
