However, vegetable oils are prone to oxidation, which leads to the formation of harmful compounds, such as free radicals, peroxides and aldehydes. This poses a health risk since these compounds have been associated with various diseases, such as cancer and heart disease.Various methods have been proposed to improve the stability of vegetable oils, such as partial hydrogenation, interesterification, and addition of antioxidants. However, these methods have been criticized due to their negative effects on the nutritional value and/or environmental impact of the oils.Recently, photonic techniques have been proposed as an alternative approach for modifying the properties of vegetable oils. Specifically, visible and UV light have been found to induce structural changes in the fatty acids and other components of the oils, which leads to improved stability, reduced viscosity and enhanced nutritional value.VCSELs are promising devices for this application since they can deliver high-intensity, monochromatic light at specific wavelengths, which enables precise control over the photochemical reactions.
