可口革囊星虫低温冻藏

摘 要 为 探 讨 不 同 冻 藏 温 度 对 星 虫 品 质 的 影 响 ， 实 验 以 基 本 营 养 成分 、 质 构 、 感 官 评 价 作 为 星 虫 品 质 评 价 指 标 ， 考 察 星 虫 在 -18℃ 、 -33℃、 -80℃冻 藏 温 度 下 品 质 的 变 化 。 结 果 表 明 ： 随 着 冻 藏时 间 的 延 长 ， 在 不 同 温 度 下 ， 星 虫 的 水 分 含 量 、 胶 原 蛋 白 含 量 、盐 溶 性 蛋 白 含 量 、 质 构 、 感 官 评 价 均 呈 现 下 降 趋 势 ， 水 溶 性 蛋 白含 量 呈 现 上 升 趋 势 ， 总 体 表 现 为 品 质 的 下 降 ； -18℃冻 藏 下 星 虫 的品 质 下 降 最 为 明 显 。关键词：可 口 革 囊 星 虫 ； 低 温 冻 藏 ； 基 本 营 养 成 分 ； 质 构 ； 感 官评 价 ； Abstract In order to explore the influence of different freezing storage temperatures on the quality of Phascoloma esculenta, the experiment took the basic nutrients, the texture and the sensory evaluation as the quality evaluation indexes of Phascoloma esculenta, and investigated the quality changes of Phascoloma esculenta at -18, -33, -80 frozen℃℃℃ storage temperatures. The results showed that the water content, collagen content, salt-soluble protein content, texture and sensory evaluation of starfish all showed a downtrend with the extension of freezing storage time, while the water-soluble protein content showed a rising trend, which generally showed a downtrend of quality.
