This research aimed to construct a Candida albicans strain with a defect in the alpha-1,6-mannosyltransferase gene and explore its application value in yeast fermentation and ethanol production. Firstly, the alpha-1,6-mannosyltransferase-deficient Candida albicans strain was constructed by genetic engineering technology, and its defective effect was verified and the fermentation performance was evaluated. Then, under appropriate culture conditions, the defective strain and the wild-type strain were compared to understand their improvement effect in ethanol production. Finally, the constructed Candida albicans strain was used for the production experiment of gallic acid to explore its application prospect in industrial production.Keywords: Candida albicans, alpha-1,6-mannosyltransferase, gene defect, yeast fermentation, ethanol production, gallic acid production.
